Thai Cooking - some popular recipes


Gai Pad Khing - Ginger Chicken

Ingredients
  • 1/2 cup chicken, cut into bite-sized pieces (more chicken if you prefer)
  • 1/2 cup ear mushroom or fresh mushroom, sliced
  • 3/4 cup baby ginger, strips
  • 2-3 Thai chile peppers, sliced (can be peppers or bell-peppers as you prefer)
  • 1/4 cup spring onions, cut into 1" pieces
  • 2 tablespoons chopped garlic
  • 3 tablespoons of vegetable oil
  • 1-2 teaspoons soy sauce
  • 2 tablespoons oyster sauce
  • a pinch of sugar
  • 1/2 medium yellow onion, sliced


Method

Heat oil in a pan. Add garlic and stir fry until golden.
Add chicken and stir fry until nearly cooked, then add sugar, soy sauce and oyster sauce and stir until it begins to bubble. Taste and adjust flavors as you like.
Add ear mushroom, ginger, peppers, onion and stir fry until the chicken is done. It cooks quite fast, be careful not to overcook.
Add spring onions, stir for a little, remove from heat and serve with rice.
